So have you ever had one of those days where, you are trying to save money by eating at home, but you swear there is nothing to eat? well, today was one of those days for me and I ended up making something delicious and healthy out of stuff that I had in the fridge and pantry.
Many of you who know me, know I am not a huge fan of mayonnaise... I will make an exception here and there, but I mostly veer away from what some people call delicious. so for my something from nothing lunch, I had tuna in a can, but didn't want to use mayo, and thus my brain started to churn. a can of white beans, a can of tuna, a small red onion, lemon zest, olive oil, some refrigerated tube of basil (so handy and stays fresh way longer than fresh basil), and voila, I had myself a Tuscan inspired white bean and tuna salad, for free. you'd pay a lot of money to eat this in a restaurant, and I know exactly what's in it and how much, which is great if you are looking to eat healthy! so easy and delicious, I wanted to share it with all of you. There's not really a recipe, I literally just eye-balled everything to taste. So when you think you have nothing to eat at home, think twice, use your imagination, and I am sure you can make something from nothing too!
