So seeing as I am not the best baker, with a low amount of patience, taking on a project like baking a red velvet cake from scratch wasn't the most exciting idea. But I took it on and I think it came out tasting quite good. I was literally in the kitchen for 4 hours with this cake, between mixing, baking, cooling cutting and frosting, this will probably be the only time I take on a project of this scale. But I wanted to share with you, that even if you don't love baking, that once in a blue moon, you too can pull off making a cake like this from scratch and have it taste good! so enjoy baking this yummy cake with home made cream cheese frosting. here's the recipe I used for the cake and the frosting. good luck and happy baking!
For the Cake:
2 sticks butter, room temp
1 1/2 Cup sugar
2 oz. red food coloring ( Tblspns_
3 Tblspn cocoa powder
pinch salt
2 eggs
1 Cup buttermilk
1 tspn vinegar
1 tspn vanilla extract
2 1/2 cups all purpose flour
1 1/2 tspn baking soda
heat oven to 350 degrees. using the paddle attachment on your kitchenaid mixer, cream butter and sugar until light and fluffy.
in a separate bowl, make a paste out of the food coloring, cocoa powder and salt. mix paste into butter mixture by hand.
In a measuring cup stir eggs with butermilk and add to batter. Mix in vinegar and vanilla, then add flour and baking soda. mix until combined. Bake at 350 until a toothpick comes out clean from the center of the cake. (depending on the size of the cake it may take up to 50 min) Allow to cook before frosting.
For the Frosting:
2 (8oz.) Packages cream cheese
1/2 cup buter, softened
2 cups confectioners sugar
1 tspn vanilla
in the kitchenaid, mix all ingredients together until combined. keep in fridge when not in use.
