Recipe Friday: 7/20 Grilled Peach Salad
Happy Friday. Today I have a recipe that is light and fresh and great for a summer lunch or daytime gathering. It's simple, and full of flavor and really allows summer's best stone fruit to shine. This recipe has minimal ingredients and can be thrown together quickly, so it's a nice recipe to have on hand. Enjoy this dish al fresco at the park, on a picnic, at a party, or just as a lunch at home. It would pair well with a glass of sparkling rose (I feel like most of these summer recipes taste great with a little glass of bubbly), or even a glass of Pinot Noir, something light and fruit forward. Grilled Peach Salad with Goat Cheese & Prosciutto
2-3 fresh peaches (white or yellow work), halved for grilling, then quartered for serving
6 cups arugula
1/2 cup goat cheese
8 slices prosciutto
vinaigrette
1/4 cup olive oil
1/2 cup champagne vinegar
1 tspn fresh thyme
salt and pepper to taste
* for the vinaigrette, put all ingredients in a jar, put a lid on it and shake it up until it's blended (this is the technique i frequently use when i make home made dressings)
Salt and pepper the peaches and add a light drizzle of olive oil, and grill on a bbq or on an inside grill/grill pan just enough to get char marks. Toss the arugula in the dressing place in a large bowl. Top with pieces of goat cheese, the grilled peaches, and top that with the slices of prosciutto. Delicious!! Enjoy.
