Farmer's market pickles
So I recently went to the Alemany farmer's market and came across some amazing cucumbers. They looked perfect for pickling... and so I was inspired to buy a bunch, and now I am reaping the benefits. Pickling is super easy, and isn't as complicated as you may think, and it makes these yummy cucumbers last for a long time. It's ideal to let them sit in the jars for 3 weeks for maximum flavor, but I tried them on the same day that I made them and they already tasted amazing. So I can't imagine what the flavor explosion will be like in a few weeks! can't wait. Happy pickling.
1 quart of sliced cucumbers
1 cup distilled white vinegar
1 cup water
1/4 cup Kerr kosher picking spice mix (i know, it's pre bought, but it has all the pickling spices you could want in one container)
2 cloves of garlic sliced
fresh dill
bring all of the liquid and the spice mix to a boil. while the liquid gets boiling slice the cucumbers however you'd like. I did long slices, sandwich ready, and I also did pickles chips for snaking on. put the cucumbers in a bowl along with garlic and fresh dill. Pour the boiling liquid into the bowl. Allow to cool for about 30 min, and place into mason jars. keep in fridge for 3 weeks, and then enjoy!!
