Being a part of the restaurant business, we get a staff meal every night after our shift is over. Usually there are leftovers, and we all take what we think we will use up the next day, and other days we throw the leftovers away. I decided that when I can, to take home the leftovers and reinvent it. This was my first attempt. Our sous chef made an amazing DIY tortilla soup. He made the soup from scratch in a blender, and then cooked off some chicken, some avocado, tortilla strips, cllantro, the whole spread to make our own individual bowls of soup. at the end of the feeding frenzy, there was so much of the soup base left, and I thought it would make an amazing enchilada sauce... and thus the reinvention of the family meal idea began. The following night, there was a bunch of leftover steak, and so I decided to make some homemade steak enchiladas. the end result was just what I had anticipated. delicious! All we actually had to buy to make this meal was cheese and really good corn tortillas! Easy as pie, or enchilada pie. Delicious, homemade, and really inexpensive. Can't wait to experiment with more!! Happy Cooking.

Reinventing the "Family Meal"
